Scrubbing hard is the instinct and it is what ruins cookware surfaces. Almost everything comes off with heat and time instead.
Deglaze While It Is Hot
The most effective method and the one professionals use, because it is also a cooking step.
With the pan still hot, add water, stock or wine and scrape with a wooden spoon. The temperature difference lifts residue in seconds.
On stainless that residue is fond and it becomes a sauce. On any pan it saves ten minutes at the sink.
Coated Surfaces Cannot
The important distinction. Anything with a nonstick element must not meet abrasive powders, steel wool or scouring pads.
On a hybrid surface the raised steel takes utensil contact during cooking, and that is different from being scoured with an abrasive, which reaches the recessed material.
Care guidance specifying a soft sponge and mild detergent, of the kind at cooker-king.net, is protecting the part that cannot be replaced.
The Soak
- Hot water and a little detergent, left for thirty minutes
- For stubborn residue, water simmered in the pan for a few minutes
- Bicarbonate of soda in the water for burnt sugar or protein
- A nylon scraper, not steel wool
- Time does the work that force otherwise does
Stainless Can Take More
Bare stainless tolerates a specialist cleaning powder and a firm scrub, which removes discolouration and burnt residue that nothing else touches.
Rainbow staining on stainless is a harmless oxide layer from heat, and an acid such as vinegar or a proprietary cleaner removes it.
White chalky spots are mineral deposits from hard water, and vinegar removes those too.
Never Shock a Hot Pan
Cold water into a hot pan causes warping, because the base contracts faster than the walls.
A warped base rocks on a hob and never sits properly on induction. Let the pan cool first.
Dishwashers Are Hard on Cookware
Detergents are strongly alkaline, which dulls aluminium and attacks coatings over many cycles.
Dishwasher safe means it will survive, not that it is the best treatment. Handwashing extends the life of anything you care about.
Dry It
Water left standing on steel causes spotting and pitting, particularly with salt or acid present.
Do Not Stack Wet
Pans stacked damp scratch each other and trap moisture.
Pan Protectors
A cloth or felt disc between stacked pans prevents most surface damage in a cupboard.
